Shout out to the Vegan Stoner for the inspiration behind my new black bean cakes, meat-eater APPROVED!
Here's my version:
Ingredients:
two zucchinis
approx 4 T avocado or olive oil, divided
2 T soy sauce or tamari, divided
1 T whole flax seed
1.5 T water
1 19 oz can of black beans
1.5 c rolled oats, divided
approx 1-1.5 c panko bread crumbs
1 t salt
one half white onion
(1) cut two zucchinis in half length-wise and grill both sides in 1 T oil and 1 T soy sauce (I use organic low sodium tamari).
(2) while the zucchini is grilling make one flax egg in a small bowl (1 T flax seed and 1.5 T water) and set aside.
(3) in a high powered blender mix the grilled zucchini, one 19oz can of black beans, 1 T tamari or soy sauce, 1/2 cup of oats, and the flax mixture.
(4) manually stir that blend into 1 cup of oats, 1/4 cup of panko bread crumbs, and a t of salt.
(5) manually make small patties and coat with panko crumbs.
(6) fry the patties in sliced onions and avocado or olive oil.
(7) serve with guacamole, salsa, and/or veganaise. Enjoy!
