My recipes: Sugarless granola cereal



Because I've become kinda crunchy...

This granola recipe is my first attempt at a published recipe. I was so frustrated with so many "healthy" store-bought granola cereals that contained sugar so I created this one myself. So here it goes, my first published recipe:)

Sugarless granola cereal

1/4 c pepitas
1/4 c flax seeds
1/2 c walnuts
1/4 c sunflower seeds
1/4 c uncooked quinoa
2 c oats (regular, not quick)
1/4 c unsweetened coconut
1 tbsp black sesame seeds
1/2 tsp cinnamon
1 tsp vanilla
1/4 c maple syrup

Preheat the oven to 350 deg.

In a high powered blender, mix the pepitas, flax seeds, walnuts, sunflower seeds, and quinoa until the mixture is more meal-like. Stir the blended mix into the oats, coconut, sesame seeds, and cinnamon. Pour the vanilla and then the maple syrup over the mixture and stir until everything is coated and slightly sticky.

Place in a shallow oven/ serving dish and place in the oven for 35-40 minutes, stirring every 12-15 minutes. Stirring periodically is important so that the granola doesn't burn to the dish.

If you double this recipe, increase the cooking time to at least 50 minutes.

Cool for at least 30 minutes.

I top this cereal with homemade unfiltered almond milk, a handful of blueberries, and a banana. Yum!
