My recipes: The Ultimate Baby Cracker

After a year of modifying this recipe I think I have it!

The Ultimate Baby Cracker

Required: high powered blender and dehydrator

1/2 cup of whole flax seeds
1/3 cup of ground flax seeds
1/4 cup black sesame seeds
1 18oz (540mL) can black beans
1 large carrot
1 roma tomato
1 cup of shredded kale
1/3 cup of sunflower seeds
1 cup water
parchment paper

If you have a high powered blender, ground the flax in the dry container. Otherwise use pre-ground flax.

Combine the whole and ground flax and sesame seeds in a bowl and set aside.

Blend the beans, vegetables, sunflower seeds and water in the blender until they are completely blended. Note, you can use any fruits/vegetables that you have on hand. Because the mix will be dehydrated, all produce should work.

Manually mix the wet and dry ingredients, folding until well mixed. The mixture should be thick, almost like a pudding consistency.

Cut parchment to the size of the dehydrator trays. Spread the mixture evenly over the parchment paper. This recipe should cover four sheets/ trays. If you are making this recipe for older children and adults I would add course sea salt on top of the spread mixture, and possibly even a teaspoon of fine sea salt mixed into the mixture.

Dehydrate at 120 deg for approximately four hours. At this point the cracker should be soft (not brittle) and cleanly pull away from the parchment paper.

Score the large crackers and place them back in the dehydrator without the parchment paper. Remember, if the mixture is still sticking to the paper, they are not ready for this step.

Turn the dehydrator down to approximately 105 deg and leave to finish dehydrating for as dry as you want your cracker. I prefer a very dry cracker (any moisture left in the cracker can be detected by pinching the cracker). This could take up to 8-10 hours so I like to leave this part for overnight.

Store for up to two weeks in an air tight container at room temperature. We serve these crackers with natural peanut butter for breakfast, plain as a snack on the go, or with hummus at dinner:)
